Chef Carlos Rosas, a vibrant and innovative culinary force, began his illustrious journey at the tender age of 13 in the lively taquerias of his hometown, where he worked alongside his uncles. Here, he honed his skills preparing traditional Mexican fare, including succulent barbacoa, flavorful carnitas, and rich birria. His passion for cooking led him to the prestigious Gordon Bleu Culinary School at 20, where he immersed himself in International Cuisine, with a special focus on Mexican and Italian dishes, under the guidance of renowned chefs.
After refining his culinary prowess, Chef Rosas ventured to Cancun at 23, where he elevated the dining experiences on prime cruise liners, blending his traditional roots with a flair for international tastes. His journey then took him to the United States, where he established La Fiesta in North Carolina. This venture blossomed into a successful chain of eight restaurants, showcasing his ability to blend traditional Mexican recipes with modern culinary techniques.
In Wellington, Florida, Chef Rosas continued to expand his culinary empire. He spearheaded the kitchen at the International Polo Club, launched and later sold a highly successful food truck named Stuart, and founded La Tradicional, a testament to his roots and innovative vision. Currently, as the Executive Chef at an Italian Gourmet Restaurant and Tentacion Mexican Restaurant, Chef Rosas continues to influence the culinary scene with his dynamic and bold creations.
